Turkey Chili with Corn

Ingredients
  

  • 6 sprays olive oil cooking spray
  • 1 lb. ground turkey
  • 1 onion chopped
  • 28 oz canned crushed tomatoes
  • 15 oz canned red or pink kidney beans
  • 15 oz canned white kidney beans
  • 6 oz canned tomato paste
  • 1 cup corn
  • 1/2 tbsp minced garlic
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp ground cumin
  • 1 tsp red chili powder
  • 1/2 tsp red pepper flakes

Method
 

  1. Turner your burner on to medium heat. Spray your skillet with cooking spray, add onion and sauté for two minutes.
  2. Add ground turkey and cook, starting to break up into small bits with your spatula. Add in minced garlic and mix well.
  3. Add crushed tomatoes, red kidney beans, white kidney beans and tomato paste. Mix well.
  4. Add the dry ingredients and mix thoroughly.
  5. Add in the corn and mix well.
  6. Simmer on low for 30 minutes.
  7. Enjoy with you favorite fixings, such as shredded cheddar cheese, sour cream and chopped red onion.
