Pumpkin Bars

Ingredients
  

  • 4 eggs
  • 1 2/3 cup sugar
  • 1 cup oil
  • 16 oz canned pumpkin
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt

Frosting

  • 4 oz cream cheese
  • 1 stick margarine
  • 1 tsp vanilla
  • 2 cups confectioner's sugar sifted

Instructions
 

  • Preheat oven to 350 degrees.
  • Using a stand mixer, beat eggs, sugar, oil and pumpkin together.
  • Add dry ingredients to batter and mix well.
  • Pour batter into an ungreased or non-stick 15x10 inch jelly roll pan.
  • Bake for 25-30 minutes.
  • Meanwhile, to make the frosting, mix the cream cheese, margarine, vanilla and confectioner's sugar until smooth.
  • Once cake is removed from oven and cooled, spread the cream cheese frosting evenly over the cake. Slice the cake into even squares and enjoy!
