Pumpkin Bars

Ingredients
  

  • 4 eggs
  • 1 2/3 cup sugar
  • 1 cup oil
  • 16 oz canned pumpkin
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
Frosting
  • 4 oz cream cheese
  • 1 stick margarine
  • 1 tsp vanilla
  • 2 cups confectioner's sugar sifted

Method
 

  1. Preheat oven to 350 degrees.
  2. Using a stand mixer, beat eggs, sugar, oil and pumpkin together.
  3. Add dry ingredients to batter and mix well.
  4. Pour batter into an ungreased or non-stick 15x10 inch jelly roll pan.
  5. Bake for 25-30 minutes.
  6. Meanwhile, to make the frosting, mix the cream cheese, margarine, vanilla and confectioner's sugar until smooth.
  7. Once cake is removed from oven and cooled, spread the cream cheese frosting evenly over the cake. Slice the cake into even squares and enjoy!
