No-Bake Key Lime Pie Mini Cheesecakes

Ingredients
  

  • 1 cup graham cracker crumbs
  • 2 tbsp brown sugar
  • 3 tbsp butter melted
  • 8 oz cream cheese room temperature
  • 14 oz sweetened condensed milk
  • 1/3 cup lime juice

Instructions
 

  • Melt butter in microwave and mix with graham cracker crumbs and brown sugar.
  • Using a pie dish or individual dessert dishes, cover the bottom with the graham cracker crumbs to make a crust.
  • In a blender, add the cream cheese, sweetened condensed milk and lime juice, blend until smooth and silky.
  • Pour the cheesecake filling over the graham cracker crust in your pie dish or individual dishes.
  • Place in the refrigerator for a few hours until firm.
  • When ready to serve, place a dollop of whipped cream on top along with the zest of a lime. Then enjoy!
