Leftover Irish Egg Rolls

Ingredients
  

  • 2 cups corned beef cooked
  • 1.5 cups sauerkraut
  • 4 slices swiss cheese halved
  • 8 egg roll wrappers
Mustard Sauce
  • 1/2 cup dijon mustard
  • 2 tbsp honey mustard
  • 2 tbsp Guinness stout beer

Method
 

  1. Preheat air fryer to 400 degrees.
  2. Scoop 2 tablespoons of corned beef to your egg roll wrapper.
  3. Add 2 tablespoons of sauerkraut on top of the meat.
  4. Place half a slice of swiss cheese on top of the sauerkraut.
  5. Fold wrapper into an egg roll tightly, sealing the end with water.
  6. Place 4 egg rolls into your air fryer and cook for 7 minutes.
  7. While eggs rolls are in air fryer, mix the mustard sauce ingredients and set aside.
  8. Once all your egg rolls are cooked, serve with the mustard sauce and enjoy!

Notes

If you don't own an air fryer, you could fry these in oil on your stove top.  Don't forget to serve these with my tasty mustard sauce!
