The best thing about these mini cheesecakes are they are super duper easy to make. The crust consists of three easy ingredients: graham cracker crumbs, melted butter and brown sugar. The cheesecake is made up of cream cheese, sweetened condensed milk and lime juice. You read that right, that’s it.
I decided to use these cute tasting coupe dishes, but a pie dish would work just as good. Here’s a link to similar glasses. Don’t forget to put a dollop of whipped cream on top and zest some lime!

No-Bake Key Lime Pie Mini Cheesecakes
Ingredients
- 1 cup graham cracker crumbs
- 2 tbsp brown sugar
- 3 tbsp butter melted
- 8 oz cream cheese room temperature
- 14 oz sweetened condensed milk
- 1/3 cup lime juice
Instructions
- Melt butter in microwave and mix with graham cracker crumbs and brown sugar.
- Using a pie dish or individual dessert dishes, cover the bottom with the graham cracker crumbs to make a crust.
- In a blender, add the cream cheese, sweetened condensed milk and lime juice, blend until smooth and silky.
- Pour the cheesecake filling over the graham cracker crust in your pie dish or individual dishes.
- Place in the refrigerator for a few hours until firm.
- When ready to serve, place a dollop of whipped cream on top along with the zest of a lime. Then enjoy!
