No-Bake Key Lime Pie Mini Cheesecakes

Boy, do I have the perfect summer dessert for you! This take on Key Lime pie is absolutely delicious. So smooth and creamy, these mini cheesecakes will want you going for seconds. So refreshing with just the right amount of tartness, perfect for a hot summer day!

The best thing about these mini cheesecakes are they are super duper easy to make. The crust consists of three easy ingredients: graham cracker crumbs, melted butter and brown sugar. The cheesecake is made up of cream cheese, sweetened condensed milk and lime juice. You read that right, that’s it.

I decided to use these cute tasting coupe dishes, but a pie dish would work just as good. Here’s a link to similar glasses. Don’t forget to put a dollop of whipped cream on top and zest some lime!

These are perfect summer barbeque, a family get-together or just because. You won’t be disappointed with this dessert. Trust me.

Ingredients Method

Ingredients
  

  • 1 cup graham cracker crumbs
  • 2 tbsp brown sugar
  • 3 tbsp butter melted
  • 8 oz cream cheese room temperature
  • 14 oz sweetened condensed milk
  • 1/3 cup lime juice

Method
 

  1. Melt butter in microwave and mix with graham cracker crumbs and brown sugar.
  2. Using a pie dish or individual dessert dishes, cover the bottom with the graham cracker crumbs to make a crust.
  3. In a blender, add the cream cheese, sweetened condensed milk and lime juice, blend until smooth and silky.
  4. Pour the cheesecake filling over the graham cracker crust in your pie dish or individual dishes.
  5. Place in the refrigerator for a few hours until firm.
  6. When ready to serve, place a dollop of whipped cream on top along with the zest of a lime. Then enjoy!
