Grinch Cookies!

I have been watching Dr. Seuss’ How the Grinch Stole Christmas movie, the Jim Carrey version, a lot this holiday season. I never really watched it before this year and I have to tell you, it’s pretty darn good. Jim Carrey’s performance in the movie is phenomenal. The ability he has to bring this iconic character to live-action life is just plain awesome. If you haven’t seen the movie, watch it. You’ll get a ton of laughs and there’s a life lesson to learn about the true meaning of Christmas.

With that being said, having watched the movie so many times this year and being in a baking mood, I decided to bake a batch of Grinch-inspired cookies! You might ask what are these cookies? Well, they’re green cookies (like the Grinch) with a candy heart sprinkle (the Grinch’s heart that grows). Now these cookies are super easy and only require 4 ingredients – a cake box mix, oil, eggs and food coloring. Easy, right? Baking these cookies is a great activity for children – young and old 🙂 – as well. A great family activity!

Using a cake box mix makes these cookies super moist. There is a slight cake-like texture to the cookie, but they are still delectable and melt in your mouth.

They’re soft, tender and have just the right amount of sweetness to them. They’re perfect.

Make these cookies. And when they’re cooled, put the movie on your TV and watch it while enjoying a cup of hot cocoa and a Grinch cookie 🙂

Grinch Cookies

Servings 24 cookies

Ingredients
  

  • 1 French vanilla cake mix dry mix only
  • 1/2 cup vegetable oil
  • 2 eggs
  • green food coloring drops vary depending on your color preference
  • 1/2 cup powdered sugar
  • red heart candies

Instructions
 

  • In the bowl of a stand mixer, cream together the cake mix, oil, eggs and food coloring.
  • Drop by tablespoon into confectioner's sugar and roll into balls until completely covered.
  • Chill the dough balls in the refrigerator for 20 minutes before transferring to a baking sheet.
  • Preheat oven to 350 degrees.
  • Once chilled, place dough balls on a cookie sheet and press 1 candy heart into each ball.
  • Bake for 8-10 minutes until just set.
  • Once cooled, sprinkle with powdered sugar if desired.
  • Then enjoy!
