Well the day is finally here. I am going to share the recipe for these soft and chewy cranberry white chocolate chip cookies. These cookies are probably the best cookies I’ve ever made. I get so many compliments on them every year I make them. Everyone loves them. They are perfect for the holiday season.
The first time I made these cookies was for a Christmas cookie exchange we had at work a few years ago. As many of you know, my day job or night job rather is as a critical care nurse. So the one year, Christmas Eve nightshift and Christmas Day dayshift exchanged cookies on the morning of Christmas Day. I had made an extra batch and shared them with my co-workers overnight, including the night supervisor. She LOVED these cookies so much, I shared the recipe with her. She later told me that she had baked a batch at home when her son was on leave. He loved them so much that he REQUESTS them every year when he comes home. I thought that was awesome to hear!

These cookies are soft, chewy and just the right amount of sweetness. The cranberries deliver their tartiness in every bite and the white chocolate chips give you that creamy chocolatey-ness to them. They bring these classic holiday flavors together in every bite.



These cookies scream the holidays with the bright cranberries and white chocolate chips. I don’t think I could bake them any other time of the year, except now. These would be perfect to bring to a holiday cookie exchange.


What’s easy and fun about the actual cookie dough is you can interchange the add-ins. This is a great base recipe for soft and chewy cookies. Instead of cranberries and white chocolate chips, use peanut butter chips or semi-sweet chips. It’s that versatile!

Cranberry White Chocolate Chip Cookies
Ingredients
- 3/4 cup unsalted butter room temperature
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 tbsp vanilla
- 2 eggs
- 2 cups all-purpose flour plus 2 tablespoons
- 2 tsp cornstarch
- 1 tsp baking soda
- pinch salt
- 1 cup dried cranberries
- 1 cup white chocolate chips
Instructions
- Using your stand mixer, beat the butter, brown sugar and white sugar together until light and fluffy.
- Add the vanilla and eggs to combine.
- Add the dry ingredients – flour, cornstarch, baking soda and salt until a soft dough has formed.
- Remove bowl from mixer and hand stir the cranberries and white chocolate chips into the dough.
- Refrigerate the cookie dough for at least 1 hour or overnight if able.
- Preheat the oven to 350 degrees once the dough has chilled and ready to be baked.
- Remove chilled dough from the refrigerator and roll into tablespoon-sized balls, placing each ball 2 inches apart on a silicone lined baking sheet.
- Bake in oven for 8-10 minutes. The cookies may look slightly undone, but they will continue to set once they are cool.
