Guinness Chocolate Cupcakes with Bailey’s Buttercream Icing

Need a dessert for St. Patrick’s Day? These cupcakes are it! Made with Guinness stout beer and Bailey’s Irish Crème liqueur, these cupcakes scream St. Patrick’s Day!

Moist, chocolate cake with just a hint of Guinness to it. These are to die for!

The creaminess of the icing just melts in your mouth with every bite!

Guinness and Bailey’s pair so well together in these cupcakes, you’ll be dreaming of your next bite while still enjoying the first.

Guinness Chocolate Cupcakes with Bailey’s Buttercream Frosting

Ingredients
  

  • 1 cup Guinness stout beer
  • 1 cup butter unsalted, at room temperature
  • 3/4 cup cocoa powder
  • 2 eggs
  • 2/3 cup sour cream
  • 2 cups flour
  • 2 cups sugar
  • 1.5 tsp baking soda
  • 3/4 tsp salt

Frosting

  • 2/3 cup butter unsalted, softened
  • 6 cups powdered sugar
  • 4 tbsp milk
  • 4 tbsp Bailey’s Irish Cream liqueur
  • 2 tsp vanilla

Instructions
 

  • Preheat the oven at 350 degrees and line a cupcake tin with liners.
  • In a saucepan over medium heat, bring the Guinness stout beer and butter to a simmer.
  • Add the cocoa powder and wisk until smooth, then remove from heat.
  • In a large bowl, combine your dry ingredients and set aside.
  • In a stand mixer, beat the eggs and sour cream until combined.
  • Add the Guinness-chocolate mixture and beat until well combined.
  • Add the flour mixture and beat until mixed well.
  • Fill each cupcake liner about 2/3 of the way and bake for 17 minutes.

Frosting

  • Beat the butter and powdered sugar until well combined.
  • Add the vanilla and Bailey’s and mix well.
  • Slowly add the milk 1 tablespoon at a time until the frosting is fluffy and smooth.
  • Fill a piping bag or plastic storage bag with icing and pipe onto the cupcake.
