A few years ago, just around Valentine’s Day, I had two of my friends over for a girls night slumber party and the next morning, I hosted a breakfast for them. I set everything up on my kitchen island for coffee, mimosas and of course, a few easy breakfast dishes for us to munch on.
I set up a coffee bar on the one end of my kitchen island with coffee mugs, creamer, sugar and of course coffee.
On the other end, I set up a mimosa bar. What’s better to cure the hair of the dog, than a mimosa? I used these champagne flutes from Bed, Bath and Beyond with a carafe of orange juice and Verdi champagne.
I wanted to have a selection of breakfast foods that were easy and quick to make. So I set out a fruit salad, egg cups and waffle and fruit skewers.
The egg cups are super easy to make. All you have to do is chop up vegetables of your choice and fill a muffin tin with wisked eggs and the vegetables. Just bake in the oven until the eggs are set. These could even be made ahead and then placed in your freezer for a quick breakfast.
The waffle and fruit skewers are super easy as well and only three ingredients: mini waffles, Nutella and the fruit of your choice. I like strawberry and banana but you could use anything you think would pair well. Spread Nutella on one side of a waffle, skewer onto the stick and alternate with strawberry and banana. So easy, delicious and kid friendly!
This would a perfectly chill Valentine’s Day breakfast or even for a weekend morning!
