I hope everyone had a wonderful Thanksgiving! I know we sure did and this year we have so much to be thankful for! Good health, great jobs that provide, clothes on our backs, food on our table and the overwhelming love and support of our families and friends. And to make it extra special, I was able to be home both Thanksgiving Eve and Day so I could cook for my family.
To start off this food-filled day, I wanted to make a special breakfast. I started searching on Pinterest and came across a pumpkin french toast bake by the Minimalist Baker. Yes, that’s right, PUMPKIN. Everything about this casserole screams fall – pumpkin, cinnamon, pumpkin spice – all these flavors mixed into one. The best thing about this french toast is you can prep it the night before. This allows all the flavors to mesh together and the bread to soak in the egg mixture. Just pull it out of the fridge in the morning and bake it in the oven then! Saves so much time! Since I started prepping a few things the night before, I figured why not prep this too.
While the French toast was baking, I decided what Thanksgiving morning isn’t complete without an apple cider mimosa? I had invited my brother over for breakfast and decided to make us these cocktails to enjoy before having the casserole. And they’re so easy to make, just two ingredients – champagne and apple cider!
So grab your ingredients and let’s get started:
I found these stemless champagne glasses at Walmart, but you can find them anywhere – World Market, Target, Amazon. They’re perfect for a mimosa! Just rim the glass with cinnamon sugar and add a paper straw!
Next step, add your champagne. I always add the champagne or liquor first to any cocktail and then top with the mixer to start the mixing.
Then top with the apple cider. I mixed about half and half, but you can add as much as you want of both.
And of course, no cocktail is complete without a garnish! I sliced up an apple and added it to the rim. My knife cutting skills weren’t the greatest, but you get the point!
And voila! You’ve got yourself an apple cider mimosa! Cheers to a great start to the holiday!
As we were finishing up our mimosas, the French toast casserole was done baking in the oven. I pulled it out of the oven and it smelled like heaven. The aroma of pumpkin and cinnamon just filled my kitchen, we couldn’t wait to dig in!
I sprinkled the French toast with cinnamon sugar beforehand and then topped with powdered sugar when it was done baking. The recipe didn’t call for this, I just added my own little twist to this recipe.
I served the French toast with Johnsonville Maple flavored breakfast sausages to round out the meal and they were delicious. My brother raved about the sausage! They were a perfect compliment to the French toast.
Make sure to pour maple syrup over your French toast before eating, you won’t regret it! Absolutely delicious!

Apple Cider Mimosa Makes 1 Ingredients apple cider champagne cinnamon sugar apple slice Rim a champagne flute with cinnamon sugar, if desired. Add equal parts of apple cider and champagne to the champagne flute. Top with apple slice. And enjoy! |
