A Mother’s Day Brunch

I LOVE brunch foods and I thought what better way to celebrate my mom than to have a brunch on Mother’s Day! You get a little of both worlds: breakfast and lunch. And of course, you can’t forget to enjoy it all with a mimosa! Moms are special people in our lives that make life special for us, so I wanted to make it special for her. (May have used too much “special” there but you get the point ;))

Let’s get the easy stuff out of the way: sausage, fruit salad and shrimp cocktail. Can’t have a brunch without any of these foods and they are delicious!

The shrimp cocktail I served in an oversized martini glass. I filled it with with ice, placed the cocktail sauce in the middle and added the shrimp all around and on the rim.

This healthy version of fruit dip was just as delicious as its counterpart. Creamy smoothness with just the right amount of sweetness, makes for the perfect fruit dip.

I made a crustless quiche as well. Quiche of any kind is a staple at brunch tables. Everyone loves a quiche. This particular one had crispy bacon, spinach and earthy mushrooms. De-lish. Instead of serving it in the traditional pie dish, bake it in a square casserole dish. Shake things up a bit.

And you can’t have brunch without a potato. My husband made the breakfast potatoes for our brunch. Crispy bacon, crunchy potatoes and caramelized peppers are the essence of this breakfast dish. YUM.

My mom’s favorite appetizer is a caprese salad, so I knew I had to serve it for her on Mother’s Day. And who doesn’t love mozzarella paired with tomato and basil? This appetizer is easy to put together as well and can be prepared the morning of.

These little blueberry cheesecake tartlets were fabulous. Sweetness from the blueberries complimented the tartness of the cheesecake perfectly. A wonderful bite of dessert.

These fruit pizza cookies were awesome! And these are a great activity that you can do with your kids. Simply buy store-made sugar cookies or the premade dough, bake in the oven and decorate using the recipe for the “sauce” and cut up fruit. Kids can decorate the cookies and it’s a healthier option.
